The Best Jamaican Fruit Cake on the East Coast
Yeah, I said it. And I’m not exaggerating either. I have tasted lots of different versions of Jamaican “Fruit Cake” or “Black Cake” or “Rum Cake” (or whatever YOU call it), and not a single one has come close to MY father’s version.
Daddy has been making these cakes for as long as I can remember. I have spent many nights creaming butter and licking batter out of bowls with my sister. No one can make these cakes like Daddy can.
When I was younger, the little pieces of fruit used to irk me. So Daddy used to have to make a separate mini cake just for me that had no fruits. Now I don’t have to worry about fruit bits because he blends the fruits. That’s good news for picky eaters like myself don’t want to have to pick the fruit out!
